Amha BelaySpirulina in Human Nutrition. ISBN 1-4200-5256-X.
Edited by M.E.Gershwin and Amha Belay. CRC Press. www.crcpress.com. Available at Amazon.com.

This new book brings together a wide range of research studies on Spirulina in a single reference volume. The book was edited by M. Eric Gershwin, MD, a professor of immunology and an expert in nutrition and immunology, and Amha Belay, Ph. D., who serves as scientific director for Earthrise Nutritionals and has extensive knowledge and experience in Spirulina production, quality assurance and health applications.

A large body of scientific literature exists on the nutritional and health benefits of Spirulina. However, this information has been published in individual studies and papers published in numerous journals, making it difficult for scientists, researchers, food technologists, students and consumers to gain access to such information easily. This book is the first of its kind to assemble a large body of knowledge on Spirulina into one reference.

The studies in the book are written by a select group of reputable international scientists who have done extensive research in their particular areas of interest in Spirulina. Topics on Spirulina covered in the book include production and quality assurance, antitoxic properties, therapeutic utility, antioxidative and hepatoprotective effects, drug-induced nephrotoxicity protection, immunity and natural killer cell activation, antibody production, and antiviral agency.
